Hello from renovation land. This morning I snuck into our kitchen to make lunch ahead of time. The electricians are coming shortly. Apparently the power outage in our kitchen is a result of a broken wire, which requires them to knock holes in our walls in order to rewire the part of the circuit that is kaput.
I figured the kitchen may be off-limits for the rest of the day, and due to our limited budget I want to make sure that we can eat at least one meal at home today.
As residents of Ontario, we enjoy one of the greatest summer bounties around- fresh corn! The peaches of cream variety is so sweet and juicy, I swoon. Fresh corn is where it’s at people. Grilling, boiling, roasting- that’s all fine- but in my opinion the best way to enjoy locally grown, (organic) corn is straight up.
I never really thought about eating raw corn until last summer when I was experimenting with raw foods, and I happened to give it a go. I have never looked back. Try some on your next salad, and you’ll be convinced.
1 head romaine lettuce
2 carrots, peeled and sliced
1/4 red onion, sliced thinly
1/2 zucchini, chopped
1 cob of corn, de-cobbed like so
1 avocado, mashed
Juice from one lime
1/4 tsp salt
Combine and dress with salad dressing of choice. I recommend Dreena Burton’s Cumin Lime Vinaigrette from “Vive Le Vegan”. It’s a slightly sweet combination of hemp oil, lime juice, cumin, cinnamon and maple syrup. I die of happiness.
